I cooked something that I've never cooked before and I have to say that half of my desire to make it was based on it's cool looks. I mean is there any vegetable that looks more awesome that this?
It is romanesco cauliflower. I cut it apart, put it on a cookie sheet, sprinkled it with a little olive oil, salt, and pepper. I baked it till it was nice and toasty and little browned on the tips...and OH WAS IT GOOD!!
I've had a couple of people ask me for my bean burger recipe. Here it is:
Bean Burgers
2 cans of beans or the equivalent in boiled beans ( I used black and pinto)
1 small onion chopped
1 green bell or large banana pepper chopped
1 large cooked carrot (helps hold burgers together)
About 2 cups of oatmeal (add in slowly and just check for the right consistency...should be holding together like beef would)
2 tablespoons of whole wheat flour
chili powder to taste
salt and pepper to taste
Mix and smash it all together and press into patties. Then just grill them in a pan or grill until they are brown and crispy on the outside.
I've tried to make a bunch of different types and this has been my favorite bean burger.
Everything is still going good. I feel really encouraged and inspired by the people that I've corresponded with through this journey so far. It's been almost six weeks since I last went to the "big" grocery store. I did make one run to the pharmacy for some medicine. The next part of this journey is going to involve researching homeopathic medicine more. The man that runs our little organic store here is a naturopathic doctor. I am going to set up a time to talk to him further. I am not one that has sworn off medicine and doctors. I've seen the good that some medicines and certainly many doctors can do. However, I don't want to support big medicine any more than I want to support big stores. So, unless it comes down to being a real necessity, then I would like to find natural alternatives.
The dogs are doing really well on their vegetarian dog food. No problems at all with the switch.
